Wine table(s): Surprise menu

On 18.11.2024, we met for a very special event as part of the Weintafel(n) – a surprise menu.
The task: Each participant brings 3 ingredients:
- One with 250g weight
- One with 150g weight
- One with 50g weight
General ingredients such as pasta, potatoes, butter, milk, flour, sugar etc. are not included and were provided by our hosts Annette & Eiko.
All the ingredients we brought with us were then spread out on a table, which looked like this:
Now the participants were drawn by lot into one of three groups – starter, main course and dessert. Then it went in turn – each group was allowed to take one ingredient from the table, then it was the next group’s turn and so on until the table was empty. Then it was time to prepare the food:
Here is an overview of the dishes prepared by the individual teams:
Appetizers:
First starter: Scrambled crab eggs on salt leaf and yellow/red beetroot with onions and goat’s cheese
Second starter: Chanterelles and porcini mushrooms with South Tyrolean speck and sausage
Main courses
First main course: Venison capaccio with parmesan, rocket pesto and cranberries
Second main course: Cod on rocket pesto, vegetables with sprouts, carrots and yellow zucchini, braised Iberiico inner cheeks
Dessert
Gorgonzola and Zigen cheese with caramelized pear slices, honey and roasted walnuts, Kaiserschmarn with brandy plums and peanut/pistachio cookies.
All in all, a super successful event where creativity was in demand. The unanimous opinion: you can’t eat better than this, even in a top restaurant!
